It was a ridiculously long week. And Saturday morning was no different. I had to have my car in early to have a headlight bulb replaced. Mine aren’t the easy kind. You actually have to really take things apart. Then somewhere soon after some Father’s Day shopping needed to happen. In between, I had just enough time for a rushed but delicious breakfast. Usually, Saturday breakfast is a time for restoration but I had to do that on a short schedule this weekend. All things worked out well…but I was really hungry by the time I got done with the car. I knew I had some creme fresh, heirloom spinach, bella mushrooms and brie. Threw together a folded frittata and some toast. It was so lovely. As I finished the last bite the doorbell rang. It was mom. Let the shopping begin.
