They call them heritage eggs. I think I’ve heard them called heirloom eggs too. Or maybe that’s just tomatoes. Anyway the blues and browns of the shells and the deep orange of the yokes is lovely. And the flavor superb. It brings all the senses in for the experience. I put the over medium egg on a piece of toasted, buttered focaccia. layered some spinach and topped with Brie, vegit and dill. Wonderful way to start the day.
