This morning was slow, calm and easy, and after the frenetic week I had, it was exactly what I needed. I used a lot of fresh herbs in this folded frittata. My friend from work gave me some fresh cilantro. I added some chives and brie. I topped it with some creme fraiche, more herbs and spices. I added some left over brown rice and some sauteed sugar peas. I accompanied it with a cup of strong Irish black tea with honey and creme and a small goblet of orange juice…it made for the perfect start to my day.
